Jalapeño Sausage Kampfire Kebabs

Smoky, spicy and kissed with a little sweetness, these Jalapeño Sausage Kampfire Kebabs made with Kountry Boys Jalapeño Sausage are a backyard favorite. Fast, flavorful and guaranteed to please any crowd.

Difficulty: Easy

Prep: 15 minutes

Cook: 20 minutes

Total: 35 minutes

Serves: 4

INGREDIENTS

1 package Kountry Boys Jalapeño Sausage

1 red onion

2 green bell peppers

3 jalapeños (de-seeded and quartered)

10 oz. pineapple rings (canned or fresh, if available)

1/2 cup barbecue sauce, such as Bachan's Original Barbecue Sauce

INSTRUCTIONS

Slice the link sausage in half, lengthwise and then into thirds – pieces will be approximately 2 inches.

Build the kebabs by skewering the sausage and vegetables in an alternating sequence. You should get about 6 kebabs, depending on the size of your skewers and vegetables.

Brush the barbeque sauce on the built kebabs – as little or as much as you’d like!

Cook the kebabs over a hot grill, on a hot cast iron grill pan (preheated well over medium-high heat), or under your oven's broiler (about 5 inches from the broiler) until the kebabs are slightly charred on one side.

Flip the kebabs and continue to cook until charred on a second side. Continue to cook and turn until the kebabs are charred on all sides and the barbeque sauce is slightly caramelized. Serve hot and enjoy!

They’re colorful, packed with flavor and easy to throw together in about half an hour. One bite and you’ll get a perfect mix of smoky sausage, sweet pineapple and that little jalapeño kick that keeps things interesting.

This recipe hits all the right notes — simple to make, easy to share and loaded with that signature Kountry Boys flavor.

Quick to Prep, Big on Flavor

The beauty of kebabs is how fast they come together. You don’t need a ton of prep or fancy ingredients — just a few skewers, a hot grill and good sausage to start. Slice your Kountry Boys Jalapeño Sausage into thick, hearty pieces so they hold up to the heat and stay juicy.

From there, it’s all about building layers of flavor. Thread sausage, bell pepper, onion, jalapeño and pineapple onto each skewer, alternating as you go. The mix of colors alone makes these look like something straight off a Texas cookout table. Every skewer should feel balanced — smoky sausage, crisp veggies and that sweet, golden fruit that caramelizes just right on the grill.

If you’ve ever grilled pineapple before, you know what a game-changer it is. The sugars in the fruit char slightly, turning sticky and rich, while the sausage picks up that sweetness and a touch of spice from the jalapeños. The result is a perfect bite every time — juicy, tangy and a little fiery in the best way.

Before they hit the heat, brush your kebabs with your favorite barbecue sauce. Bachan’s Original adds a savory-sweet glaze that sticks beautifully to the sausage, but any sauce you love will work. Use a light coat for a subtle shine or slather it on thick if you like that sticky, caramelized finish.

Grillin’ Up That Texas Heat

Now for the best part — cooking them up. Kebabs can go right on a hot grill, a well-seasoned cast-iron grill pan or even under your oven broiler if the weather’s not cooperating. You’ll want your surface good and hot before the kebabs go down. That quick sear is what gives them their signature char and locks in all the juices.

Lay the skewers across the heat and listen for that sizzle. Cook one side until you see grill marks and the sausage starts to crisp around the edges. Flip and repeat until each side gets that beautiful color and the sauce starts to bubble and caramelize. You’ll know they’re ready when the veggies are tender, the pineapple’s golden and the sausage smells smoky and rich.

Pro tip: if you’re grilling outdoors, soak your wooden skewers in water for about 30 minutes before threading. It keeps them from burning and makes for a more even cook. And if you’re using metal skewers, use tongs to handle them — they’ll get hot fast.

Once everything’s cooked, give each skewer a quick brush of sauce right before serving. That final glaze adds shine and flavor that’ll have folks reaching for seconds before they finish their first.

Serving It Up Right

These Jalapeño Sausage Kebabs don’t need much alongside them — they bring plenty of flavor on their own. But if you want to round out your plate, pair them with grilled corn, baked beans or a cold pasta salad. They’re also great with a few slices of Texas toast for sopping up the extra sauce.

If you’re hosting a cookout, try setting up a build-your-own kebab bar with bowls of cut veggies and fruit so everyone can stack their own. It’s fun, fast and makes it easy to please the whole crew. Kids can skip the jalapeños, while spice lovers can pile them on.

Leftovers reheat like a dream, too. Pop them in the air fryer for a few minutes or wrap the sausage and veggies in a tortilla with a little cheese for a quick lunch the next day. The smoky flavor only gets better after resting overnight.

No matter how you serve them, these kebabs bring that unmistakable taste of Texas to your plate — the kind of flavor you only get from Kountry Boys Sausage made the old-fashioned way.
