INGREDIENTS

Kountry Boys Thick-Cut Bacon , cooked

Scrambled eggs

Shredded cheddar

Thinly sliced chives

60 frozen tater tots

2/3 cup sour cream

1/2 lime, juiced

1–2 tablespoons hot sauce of choice

INSTRUCTIONS

Preheat oven to 425˚F.

Spray muffin tin with cooking spray.

Arrange 5 tater tots into each muffin tin spot.

Bake for about 10 mins, just enough to thaw and soften tots.

Using a 1/4 cup measuring cup or a shot glass, lightly grease bottom of cup and press into each cup of tots to create an even walled tater tot cup.

Place muffin tin back into oven and continue to bake for 15 mins, until cups are cooked and slightly crisp on the edges.

Fill each cup with a small amount of scrambled eggs, a few pieces of Kountry Boys Original Thick-Sliced Bacon and some shredded cheese.

Place back into the oven for 5 mins or until cheese has melted.

Remove from oven and allow cups to sit for a few mins.

Remove cups from muffin tin and top with spicy sour cream and sliced chives. Serve.
