Cut sausage into one inch pieces. Cut bacon strips in half lengthwise.

What Makes These Pig Shots Texas-Style?
Bold, Smoky Flavor
Texans don’t do boring appetizers. With bacon wrapped around sausage and cooked low and slow on the smoker, you’re layering smoke on smoke, flavor on flavor.
Why Kountry Boys Bacon and Sausage Make the Difference
Most pig shots start with generic pork, but these aren’t most pig shots. Kountry Boys Original Sausage brings hickory-smoked depth, while Kountry Boys Original Bacon crisps into the perfect cup for holding cheesy filling. The result is hearty, smoky and unmistakably Kountry Boys.
How to Serve Buffalo Pig Shots
These are the kind of appetizers that don’t need much dressing up, but they shine in just about any setting:
- Game Day Favorite – A tray of these disappears faster than kickoff snacks
- Backyard BBQ – Perfect finger food while the brisket’s still smoking
- Party Platter – Serve with extra buffalo sauce and ranch for dipping
- Holiday Spread – A bold, savory bite to balance out sweet treats and sides
Flavor Variations
- BBQ Pig Shots – Skip the buffalo and drizzle with barbecue sauce instead
- Spicy Tex-Mex – Add jalapeños to the cheese filling and top with salsa verde
- Cheesy Overload – Mix in pepper jack or mozzarella for extra gooey filling
- Sweet Heat – Brush bacon with honey or maple syrup before smoking, then finish with hot sauce
Tips for the Best Results
- Use thick-cut bacon so the cups hold their shape
- Don’t overfill — cheese expands as it bakes
- Keep smoker or grill steady at 350°F for even cooking
- Use toothpicks to secure bacon tightly around sausage pieces
- Let shots cool slightly before serving so the filling sets
Why This Recipe Works
Buffalo Pig Shots work because they combine everything people love in an appetizer: smoky meat, creamy cheese and spicy sauce. The bacon cup crisps perfectly while keeping the sausage juicy. The filling puffs up golden, and the buffalo drizzle brings the heat. It’s messy, meaty and addictive — exactly what a Texas appetizer should be.
Bringing Texas Flavor to Your Table
At Kountry Boys, we like our appetizers bold enough to hold their own against the main event. Buffalo Pig Shots are exactly that — smoky sausage, crispy bacon, cheesy filling and a buffalo kick that keeps you reaching for “just one more.”
