Sometimes the simplest meals are the best. These pinto beans are seasoned with little more than salt, pepper and fresh thyme. Add some Kountry Boys sausage into the mix, and you’ve got a delicious and satisfying one-pot meal!

1 lb. dried pinto beans, pre-soaked according to package instructions
1 package Kountry Boys Original Pork & Beef sausage, sliced into ½“ rounds
1 medium yellow onion, diced
3 cloves garlic, minced
12 cups chicken broth
1 tbsp fresh thyme
2 bay leaves
Salt and pepper to taste
In a large stock pot or dutch oven, cook sausage rounds over medium heat until lightly browned, about 8 minutes. Allow sausage to cool on a plate and reserve.
Reduce heat to medium-low. Sauté onion and garlic until translucent, about 5 minutes.
Add chicken broth, thyme, bay leaves and beans to pot. Bring to a boil, then reduce heat to medium. Simmer for 1 hour or until beans are tender.
Season with salt and pepper to taste. Serve beans on their own or atop fluffy rice.
